A whole Irish Black Angus striploin — the chef’s favourite cut, and a rather splendid way to buy your sirloin
There are few greater pleasures for a good cook than having a magnificent piece of beef to work with. And when that beef is a whole striploin from certified Irish Black Angus cattle, traditionally aged for flavour and tenderness, the possibilities are particularly appealing.
This is the cut from which sirloin steaks are taken, prized for their combination of fine beef flavour, marbling and satisfying texture. The striploin is one of the great classics of the butcher’s counter, and buying it whole gives you something rather special: the freedom to decide exactly how you would like to enjoy it.
Each striploin weighs at least 6kg, making it a wonderfully versatile proposition. You might cut a succession of thick sirloin steaks for the grill or frying pan, leave a generous section intact for a traditional roast, or divide the whole cut between the two. There is considerable pleasure in being able to choose your own steak thickness rather than accepting whatever happens to be in the butcher’s display.
The beef comes from selected Irish family farms, where the cattle are certified Black Angus, fully traceable and reared to independently assured standards. Black Angus has earned its reputation for good reason. Its characteristic marbling contributes to the flavour and succulence of the meat, while traditional ageing allows the beef to develop the depth of character that makes a properly cooked sirloin such a treat.
Specialist butchery ensures that each striploin arrives expertly prepared and ready for you to portion as you wish. And there is no need to cook it all at once. Cut into steaks or roasting joints, wrap carefully and freeze what you do not intend to use immediately.
There is a persuasive argument for buying beef this way, beyond the sheer enjoyment of having such a splendid cut in the kitchen. A whole 6kg striploin can yield around 24 generous 8oz sirloin steaks, depending on trimming and portion size. It is an excellent way to prepare for family gatherings, weekends with friends or simply a succession of very good suppers.
And the price is particularly agreeable. Individually cut sirloin steaks of this quality can command a considerable premium, whereas buying the whole striploin allows Members to enjoy the same prime cut at a notably attractive price per kilogram.
CountryClubuk Members pay just £187 for a whole traditionally aged Irish Black Angus striploin weighing at least 6kg, including refrigerated UK delivery to eligible postcodes. That works out at no more than £31.17 per kg. Members enjoy the same direct price offered to professional chefs.
A handsome roasting joint, a freezer well stocked with fine sirloin steaks, or a little of both. Whichever you choose, this is a thoroughly satisfying way to buy excellent beef.
